Using The Harvested Garlic
Remember the mushy garlic that I harvested here? With all the moisture in the air, it's not drying out as it should. So I decided to just use it in cooking. I picked one of the driest ones and started to peel the cloves. It wasn't easy because the papery dry outer skins I was used to was non-existent and instead it was moist sheaths that covered the cloves and the cloves didn't look quite ready... but I cooked them anyway in a stir-fry and no-one complained!
That young garlic is lovely just as you described - pureed in olive oil. The flavour is wonderful.
